Danshui | Age

A-ge is arguably one of the most famous and popular snacks in Tamsui. The name comes from the Japanese word "abura a ge" (abura a ge, abbreviated as a ge), which means "fried tofu skin." The method involves hollowing out fried tofu, stuffing it with vermicelli, sealing it with fish paste, steaming it, and finally drizzling it with a sweet and spicy sauce. A-ge originated as a dish invented by a street vendor trying to avoid wasting leftover ingredients. Now, it's found almost every few steps on the streets of Tamsui, and flavors like abalone and mushroom have been developed, making it extremely popular.

Danshui | Iron Egg

She kept re-braising them, making them smaller, harder, and darker with each batch, eventually creating the uniquely flavored "Iron Eggs." The process of making Iron Eggs is intricate and time-consuming, but their rich aroma and bouncy texture make them irresistible.
